METHOD / DEVELOPMENT

A three-step flavor trial.

  1. 01BASELINE

Keep your current formulation as a reference.

Prepare your usual formulation without MAGI DASHI. Use consistent ingredients and cooking methods, and retain it as a control.

    KITCHEN NOTE

Choose what you want to compare, rather than changing several conditions at once.

  2. 02TRIAL

Vary the addition level in small batches.

Choose KURO or SHIRO and start with small additions. Check changes to the formulation’s overall moisture and salt.

    KITCHEN NOTE

Develop a level appropriate to your ingredients; there is no fixed formulation rate.

  3. 03EVALUATE

    Evaluate after cooking.

Cook through under the same conditions, then compare aroma, umami, salt and texture. Record the addition level and differences from the control.

    KITCHEN NOTE

This is a starting point for product trials, not a guarantee of improved flavor.

TASTE / TEXTURE / BALANCE

01

Flavor

Aroma, umami and salt after cooking.

02
