Exploring dashi in kitchens around the world
We introduced our bonito-style dashi made without animal-derived ingredients and our gluten-free shiro dashi, SHIRO. Conversations with local buyers explored possible applications across different food cultures.
In Dubai, where many food cultures meet, we saw the potential for Japanese dashi to help people share the pleasure of food across borders.
